  1. Prepare Rice a Toni mix as per box directons
  2. In seperate skilled heat oil on med-high heat
  3. Once oil is hot, add diced onions and minced garlic
  4. In bowl mix meat, chili powder, salt and pepper…make sure all meat get coated well
  5. Add meat to hot skillet and sautee until meat is browned and cooked thoroughly (approx. 5-7 minutes); add green peppers and reduce heat to low
  6. When your rice has 5 minutes left of cooking time, add can of drained corn and stir in.
  7. In microwave safe bowl add refried beans with 2 tsp of water, cover and microwave for 2 1/2 minutes
  8. Brown your tortillas in small omelets skillet with one pat of butter for each tortilla.
  9. Turn oven on broil
  10. In 4 individual bowls, layer from bottom to top…tortilla, refried beans, rice, steak and peppers, cheese
  11. place bowls in oven to melt cheese (approx 3-4 minutes); serve with your favorite Mexican toppings ( ie; salsa, sour cream, quacamole, chopped olives, etc)
