- Prepare a pot of water that covers all the beef. Add 5 slices of ginger. Start boiling with high heat and turn to medium heat when the blood foam comes out. Boil without the pot lid.
- When the beef turns white, take them out of the water. Cut the beef to small sizes.
- Chop the rest of the ginger. Chop the garlic to fine pieces.
- Heat the oil at high heat. Add ginger, garlic, dry red pepper and Sichuan pepper corn. Before the garlic turns brown, add beef.
- Stir the beef for 3 minutes. Turn to medium heat. Add cookin wine.
