  1. Get 2 Tubes of Jimmy Dean sausage
  2. Prepare 1 pkg chorizo or andouille sausage

  4. Get 1 Lg bag frozen southern hash browns thawed
  5. Prepare 4-5 shallots chopped
  6. Make ready 3 tbsp minced garlic
  7. Prepare 6-7 mini sweet peppers chopped
  8. Make ready 1 Can rotel drained
  9. Make ready 12 Eggs
  10. Take 2 Pkg shredded cheese of your choice
  11. Prepare Chives
  12. Take Old bay seasoning
  13. Make ready Salt and pepper
Steps to make Breakfast Casserole:
  1. Cook sausages, shallots, garlic and sweet peppers together. Reserve 1 cup of mixture and set aside.
  2. Cook southern hash browns in the oven until they are slightly brown. Salt and pepper to season.
  3. Mix eggs, salt and pepper, old bay, and chives to season.
  4. In a large baking dish layer sausage mixture, southern hash browns, ham, rotel and 1 pkg of cheese. Repeat once more ending in cheese and chives.
  5. Pour egg mixture over the top of the ingrdients.
  6. Bake at 350 degrees for 45 min or until eggs are set. Add remaining bag of cheese and reserved sausage mixture and spread evenly over the top of casserole. Bake for 15 min more.
  7. Let cool for 15 min. Serve and enjoy.
